Here is an easy, absolutely delicious recipe for a fresh grilled chicken heirloom tomato-basil salad. I prefer to use free range organic chicken breast, although if you enjoy thighs you can use those as well. I usually marinade the chicken breasts in the healthiest italian dressing that I can find, add some Pink Himalayan Salt, black pepper from a pepper mill, and fresh minced garlic and then I grill is on the Big Green Egg.
Ingredients for Grilled Chicken Heirloom Tomato-Basil Salad
1 Grilled Chicken Breast
2 Ripe Heirloom Tomatoes
1/2 of Onion, sliced thin
1/4 cup Fresh Basil, chopped
Pinch of Pink Himalayan Salt
Fresh Black Pepper to taste
1/4 cup Balsamic Vinaigrette
Preparing the Grilled Chicken Heirloom Tomato-Basil Salad
Toss all of the vegetables, the salt and pepper into a salad bowl. Add the vinaigrette. Mix these ingredients and let them marry for 20 minutes. Add the grilled chicken, serve and enjoy.
NOTE: If you want to mix things up a bit you can always substitute the chicken with fresh tuna, salmon, or shrimp.0
